This, my friends, is eggplant bacon.

  • Cut eggplant into slices ( the thinnest the crispiest)
  • In a plate, mix 1-2 tbsp olive oil, 1 tbsp maple syrup and 2 tbsp soy sauce.
  • Pour the mixture over eggplant slices to cover them all evenly.
  • I was lazy so I pan fried them with olive oil for 7-8 minutes (until brown) but 12 minutes in a 350°F oven would make them crispier and more bacon like.

I used my eggplant bacon for a toast made of a toasted whole grain bread slice, homemade vegan quick creamy cheese (will post the recipe later), spinach and arugula. Sprinkle a little sea salt on top and enjoy warm.
